Remember Fruit by The Foot? Maybe rolling it around your finger into a sticky mess in the lunch room? I do. With this bar I really wanted to emphasize apples so went and hand-harvested fresh apples from Saratoga Apple on my 30th birthday and made apple butter, then apple fruit leather. Let's just say it's a long process (about 48 hours of slowly simmering with cinnamon and vanilla and then about 24 hours of dehydrating into a delicious, citric sheet of apple leather). Worth every moment of it. 

 

INGREDIENTS: 

 

75% Dark chocolate (Peruvian cacao beans, unrefined Colombian panela ) Local apple fruit leather (Mcintosh apples, panela, Nicaraguan cinnamon, Mexican Vanilla bean), maple sugar candies from Ioka Farm (Hancock, MASS).
