We (Primo Jay and Oliver) have had our eye on Öko Caribe for the last year. Tasting chocolate made from this origin by other makers this cooperative was an instant sell for us. Though small, these cacao beans are excellently fermented so have a high yield and amazingly smooth
and deep fudginess. With our proprietary roasting technique, Jay coaxes out some mild citrus ephemera on a base of deep fig feels with a slight touch of cinnamon spice. This cooperative supports over 150 farmers so we are pumped to be involved with this project.
