Functional mushroom powders

We use Malama Mushrooms and Collar City Mushrooms for all of our mushroom sourcing. Malama contributes to psychadelic research, sources all organic mushroom powders and are simply a rad company. Collar City Mushrooms is based right here in Troy, NY and teaches the local community how to grow their own culinary and medicinal mushrooms.

Maple sugar

We actually produce our own maple syrup in Gloversville NY and sell it at our downtown Troy shop. Our maple sugar that we use in Tree Hugger Chaga and other products we get from Ioka Farms in Hancock Massachusetts. They own all of their own property and have amazing land stewardship practices.

Cashew butter and coconut oil.

BeyondTheNut is a great company for Fair Trade cashews and cashew butter. For nuts we STRONGLY suggest sourcing from with the US and making sure they are Fair Trade if they are coming from abroad. Cashews are only grown in tropical environments. With tropical crops like cashews, cacao and coconut, exploitation is rampant. Definitely look for “Direct Trade.” or at least “Fair Trade” labels when purchasing. We use Nutiva coconut oil in all of our recipes.

Fung-ctionally Fudgetastic Truffle Pie Recipe

Preparation time: 15 minutes. Total time: 8 hours and 15 minutes. | Makes 8 slices.

This easy, no bake recipe takes about 15 minutes to make and is guaranteed to impress. With 7 simple ingredients including medicinal mushrooms and our ceremonial cacao, you will be feeling GOOD and have no regrets. Lionsmane mushrooms are thought to help repair neurons- leading to better memory and retention. All of that in a rich dessert? Hell yes!

Ingredients:

  • 1 gluten free graham cracker crust in pie pan.

Wet Ingredients

  • 400 g (one can of) coconut milk

  • 60 grams coconut oil

  • 80 g maple syrup or other liquid sweetener

  • 5 g vanilla

Dry Ingredients

Directions:

  1. Add all dry ingredients to a medium sized mixing bowl.

  2. Bring the coconut milk and other wet ingredients to a light simmer.

  3. Slowly pour wet ingredients over dry ingredients and let it set for several minutes to allow the cacao to melt.

  4. After 5 minutes stir all of the ingredients with a spatula until glossy. If your “ganache” breaks (the oil seperates), just add slowly add small amounts of hot water while stirring until it comes back together. Pour into your prepared pie tin and chill in the fridge for up to 8 hours.

My discovery of superfoods and transition from dysmorphia

As a child, I suffered from body dysmorphia- which made any big meals and desserts extremely challenging and socially awkward. I would either eat too much dessert- or skip it entirely. This lead to me having an unhealthy dynamic food and social gatherings.

This relationship to food lead me to study nutrition at a very early age because I just knew I needed a change. At the age of 14 I realized that I didn’t need to deprive myself of delicious things to feel and look healthy: I simply needed to supplement my diet with things that were REALLY good for me.

When you eat superfoods (mushrooms, fruits), ferments, and generally nutrient dense foods (made with whole sugars and whole grains), you feel MUCH MORE satiated, meaning you will have much less of an inclination to grab the cheap, white sugar laden sweets. When you FEEL better (your body is being supplied with the nutrients it needs) it is way easier to be present in your cravings.

This discovery was extremely powerful for me and literally lead to me opening my own superfood chocolate company. Welcome to the world of medicinal desserts: it is a world I occupy proudly and humbly.

The next part of my journey in learning about nutritional density has been ethical sourcing. In the superfood industry, there is very little recognition of the cultures and farmers that are actually the ones growing these powerful ingredients. The function of medicinal ingredients is inextricably connected to the cultures that originally cultivated them. The easiest way to express gratitude towards these cultures is to buy ingredients that are transparently sourced, whether it be the sugar, the cacao, the mushrooms: I generally don’t trust big companies. Buy from your local co-op, find good companies through social media, or keep an eye here for recommendations.
